Bell peppers are both, fruits and vegetables. Fruits in the botanical sense, and vegetables in the culinary sense. They are available in a variety of colors such as yellow, red, orange, and green. These sweet peppers not only add pleasing visuals, but crunch and nutritional value to all kinds of meals. One of their greatest advantages is the amount of vitamin C they carry. A red bell pepper has three times as much as an orange. Bell peppers are also full of potassium and have lots of other important vitamins. They include carotenoids, which are antioxidants that may help to maintain healthy eyes.
